Chinese Green Onion Pancake - 葱油饼

This is the first time I have made the Chinese green onion pancake. To my surprise it was not just easy to make but also tasted good! I just use flour and water for the dough. No need to add yeast or baking powder! HeeHee!

Mix one cup of all purpose flour and half cup of water in a food processor for half a minute until the dough come together. Put some dry flour on the board, roll the dough and rest it under a wet towel for 10 minutes. Chopped some Chinese green onion and stir in some salt set aside for the water to get out. (You don't want them to leak inside the dough) Roll out the dough and flatten it into thin layer. Spread some salt onto the dough. Rub some olive oil along with some dry flour onto the dough. Roll the dough into a long tube carefully to enclose all edges. Keep the opening facing up. Roll the tube from one end to the other, then press it down all the way. Let it set aside for another 15 minutes. Put 2 table spoons of oil in the pan then fried the flattened dough along with a table spoon of water. Cover it and let it brown on one side then turn to the other side. Remember to cook on stove top with medium heat!!
